Pequin peppers, also known as Capsicum frutescens, are small and oval-shaped with pointed ends. When dried, they take on a fiery orange-red color. These peppers are native to the mountainous regions of Mexico and measure 1/2 inch in length and 1/4 inch in width. Their intense heat is balanced by hints of sweetness and citrus notes. Ranking at an 8.5 on the heat scale (with a Scoville rating of 40,000 - 50,000), these little chiles pack a punch. A little goes a long way, making them perfect for adding a spicy kick to dishes like Pasta Diablo or hearty stews. To rehydrate, simply rinse with warm water and soak for 10 minutes, or add directly to a recipe that will cook for at least 10 minutes. Once rehydrated, dice or puree to your preferred consistency. Trust us, these Pequin Chiles are not for the faint of heart.
